At the Moulin de Salazar, breakfast is a special moment. It is served in the Mill's dining room between 8am and 10.30am.
Its composition varies each morning, always offering a choice between sweet and savoury: home-made pastries, artisan bread, free-range eggs, local cheeses, local charcuterie and fresh seasonal fruit.
If you have any special dietary requirements (vegetarian, allergies), please let us know when you make your reservation and at least 48 hours before your arrival.

To satisfy all gourmets, our menu is made up of vegetarian bases to be combined, for those who wish, with a selection of high quality meats. Organic and supplied by local producers, the meats can be simmered or cooked to perfection on the Japanese barbecue.
Menus are announced no later than 48 hours in advance: they are made up of French and local specialties and change with the seasons. You'll taste the famous Quercy melon (AOP), the region's emblem, and at the end of summer, the chasselas grape, a local product recognized as one of the best table grapes. We'll also introduce you to some traditional recipes, the secrets of which were revealed to your host by his grandmother, who lived her whole life just 15km from the Moulin de Salazar in the village of Castelsagrat... To accompany your meals, we offer a cellar of local wines.

The restaurant area today... Above all a place to live
Installed on the platform overlooking the machinery of the Moulin, the restaurant area is above all a place to live. Connected to the rooms by a cast iron staircase, a reproduction of a 19th century Parisian model, it is separated from the engine room by a magnificent glass roof framed in steel: you can take advantage of your food breaks to observe these impressive wooden and cast iron mechanisms still in perfect working order. Tools and various objects from the period are on display in a small museum under the mezzanine, historical evidence of life at the Mill. The Mill Room is the heart of the Salazar estate and is open at any time of the day.
